Spoiler alert: my recommendation if you want a Kindle device is to go for the Kindle Paperwhite Signature edition. It’s the fastest Kindle and unless you read a lot of manga and comic books, it’ll also be the best quality. Currently on Black Friday Deal from $199.99 to $154.99. Grab it while you can!
But I’m also a proponent of using an iPad mini as an e-reader with some adjustments so you can get it to feel as close to e-ink as possible. It is double the price though, so get that if you want an all-in-one device for other purposes as well (like digital planning, Notion, coloring, cozy games, Netflix, etc)
